Ingredients:
- 4 boiled eggs
- 1 sliced onion
- 1 finely chopped tomato
- 1 small cinnamon stick
- 1 tsp grated ginger garlic/ ginger garlic paste
- 1 dried red chilli
- 2 cloves
- 2 star anise
- 1 tsp cumin seeds (jeera)
- 1 tsp red chilli powder
- 1 tsp kashmiri chilli powder (optional- but it gives the curry its vibrant color)
- 1/2 tsp garam masala
- 1 tsp fennel powder
- 1 tsp coriander powder
- 1/2 tsp turmeric powder
- Handful of coriander leaves [optional]
- Salt to taste
- Kasuri methi for garnish [optional]
Direction:
1. first Heat the pan with 1 tablespoon of oil
- Once oil is heated, add cumin seeds, cinnamon stick, star anise, cloves and dry red chilli and stir for a min until spices release their aroma
- Add the onions and saute until they soften
- Now add the ginger garlic paste and saute for a minute
- Next add the chopped tomatoes and saute
- Add all the spice powders and salt at this stage
- Add 1 cup of water to form the gravy
- Once masala simmers, add the boiled eggs
- Garnish with coriander leaves and kasuri methi
- Serve this food with rice or bread.
