Egg Masala Curry

Egg Masala Curry recipe


  • 4 boiled eggs
  • 1 sliced onion
  • 1 finely chopped tomato
  • 1 small cinnamon stick
  • 1 tsp grated ginger garlic/ ginger garlic paste
  • 1 dried red chilli
  • 2 cloves
  • 2 star anise
  • 1 tsp cumin seeds (jeera)
  • 1 tsp red chilli powder
  • 1 tsp kashmiri chilli powder (optional- but it gives the curry its vibrant color)
  • 1/2 tsp garam masala
  • 1 tsp fennel powder
  • 1 tsp coriander powder
  • 1/2 tsp turmeric powder
  • Handful of coriander leaves [optional]
  • Salt to taste
  • Kasuri methi for garnish [optional]


1. first Heat the pan with 1 tablespoon of oil

  1. Once oil is heated, add cumin seeds, cinnamon stick, star anise, cloves and dry red chilli and stir for a min until spices release their aroma
  2. Add the onions and saute until they soften
  3. Now add the ginger garlic paste and saute for a minute
  4. Next add the chopped tomatoes and saute
  5. Add all the spice powders and salt at this stage
  6. Add 1 cup of water to form the gravy
  7. Once masala simmers, add the boiled eggs
  8. Garnish with coriander leaves and kasuri methi
  9. Serve this food with rice or bread.
